#cooking I've smoked a lot of meat, but about to attempt my first turkey. It's soaking in a brine solution of kosher salt, brown sugar, apple juice, apple cider vinegar, various spices, a quartered apple, and an onion. 10 hours to soak, then dry it, rub it down with a little olive oil, and into the smoker for 5 hours or so. We'll see how it goes.
