Google Fi has agreements with the US-based companies like T-Mobile, Sprint and the Hong Kong-based for the usage of their infrastructure.
The system switches between those three services depending on the signal strength and speed, As well, with the idea to control and save consuming data, "Google Fi" connects to Wi-Fi hotspots using a VPN generated by auto encryption system too complicated to explain it in some words.
But it was done in that way for your privacy safety and happens without you noticing.
So ALL your data traffic is totally encrypted.
