Saffron is an amazing component for cakes and buns! Largely underrated I wanted to make a special recipe which is easy and delicious! To this recipe you can add on sultanas, fresh pears or top it with a nice spiced glaze!
Here we go, for a large Bundt cake form!
4 eggs
1 cup granulated sugar
1 cup flour
1 tsp baking powder
1 tsp of saffrom powder or 2 drops of saffron essence.
Preheat oven at 190 degrees
For the cake, work your eggs and sugar in a ribbon for 15 to 20 minutes in a standing mixer. In between pass your baking powder and flour together thinely in a chinois.
Before folding the dry products, add your saffron drops to the eggs or add the powder to the dry products. Fold the dry products with a spatula to the ribbon, carefully do not over mix. Dig in deep to the bottom with your spatula and bring it to the top and form a circle while doing it so the prodcuts get mixed nicely together.
Butter the bundt form, **but do not put flour after!** It is a common mistake that can mess up the nice shape of your bundt cake. When you put you cake dough in the form, you cake put half, then add on thinely cut pears and put the rest of the dough.
Bake for 30 minutes at least, if you have a deeper form go for a 40 minutes.
After baking, leave it on the counter in the form for 10 minutes and then unmold it. Let it cool and add the glaze of your choice! Here is a simple vanilla glaze recipe, which you can add on the spices of your choice :
2 cups powdered sugar
3 to 4 Tbsp. milk
1/2 teaspoon vanilla extract
Mix altogether with a whisk or hand mixer.
