Low Carb Mug Muffin

Easy to make and cooks in 1 minute.

A popular breakfast at the Cassone house. Try it!

Ingredients:

► 1 egg

► 1 teaspoon cinnamon or pumpkin spice

► 1/2 teaspoon baking powder

► 1 teaspoon butter or coconut oil

► 1/4 cup flaxseed meal

► handful of berries

Directions: 

► crack one egg into a mug

► beat the egg

► add soft butter

► add rest of the ingredients except the berries




► mix in the mug


► you can now add the berries if you want them cooked and mix gently (don't mash the berries) or you can wait until the muffin has finished cooking and add the berries as a topper 

► microwave 1 minute



► remove and turn upside down to dish


► serve with more butter and enjoy
