PICO DE GALLO
The first week after arriving, my friend and former neighbor Hommar showed me how to make pico de gallo. So I don't know if it is 100 % Guatemalan traditional style, but his wife is a Guatemalan, so I just trust them.
It is very simple and has an amazingly fresh taste! I loved this the first time I had it and made it several times since. As vegetables are quiet cheap and in vast quantities here in Guatemala, it's just a must - do every now and then.
Ingredients:1 - 2 cebolla (onion), 4 tomatoes, cilantro (good amount!), 2 - 3 peppers, some hot peper and 2 - 4 fresh limes!
The receipe is very simple: Cut all the vegetables (after cleaning well) in little pieces and put them in a bowl.
After cutting all the vegetables and the cilantro, pour the lime juice on top of it. Add some salt and pepper and some spices for lovers of hot meals.
Mix it and throw it on your amazing fresh tortilla (bread works too or anything else you like as a sidedish. it is even good to just eat like that!) and welcome pure freshness in your mouth! ENJOY!
You can add any kind of meat, cream, beans or whatever you prefer on to your tortilla.
