This is an incredibly easy recipe, great for kids to make. I know it is because this is a recipe that me and my daughter have made for years.
This recipe made 20 cookies split into 2 batches.
8 tbsp Butter (softened)
1/2 cup Caster sugar
1/2 cup Light brown sugar
1/2 tsp Vanilla
1 Egg
1 cup Plain Flour
1 tsp Baking Powder
1 Cup Peanuts
In a large bowl, cream the butter with the 2 sugars.
Add the vanilla and the egg to the bowl and beat in well.
Add the flour, baking powder and peanuts
Preheat your oven to 180°C (350°F /Gas mark 4)
Form the dough into smaller balls, place them on a baking tray lined with grease proof paper and lightly press down.
Bake the cookies for 8 - 10 mins or until they are a light golden brown.
Leave the cookies on the tray for a few minutes to cool and solidify, then transfer them to a wire rack to cool fully.
Keep these cookies in an airtight container and if you are lucky you may find they last the afternoon! B-)
