For most people a bowl of mashed potato is a central part of many meals. But sometimes you just want to mix it up a little.
With that in mind, may I present an alternative, Carrot and swede mash.
**Note, in America apparently it's known as a Rutabaga??
To make it is a little more difficult than regular potatoes, but not much. Peel and dice some swede and carrots so you have equal amounts of each and place them into a pan with some salted water.
Bring it to the boil, cover and simmer for around 20 mins.
Yes, it will take longer than potatoes to soften, just bare with it.
After 15 mins squish a piece of both the carrot and swede against the side of the pan to check if they are done. Once they squish easily then you can drain them off in a colander.
It's worth pointing out here that carrot and swede mash will tend to be a bit wetter than potatoes normally are and will likely need more draining. In fact, depending on how wet your veg are, you may want to give it a quick pass with a masher while it's still in the colander.
Move the mash back to your pan and properly give it a mash.
At this point you can add in a little butter or milk if you wish, don't over do it.
- If you find that your mash is wetter than normal you can make it up before hand and simply heat it in the microwave before serving.
- To give your mash a little bite you can add in an onion.
- If you want to give your mash more body add in a small amount of potato.
- Add in some nutmeg to give the mash a little more flavour.
