Last night I made a REALLY nice soup, it was so nice I thought I would pass it on to you guys!
This is a very simple recipe to make but it tastes oh so very good!
50g Chorizo sausage, diced
1 large onion, finely chopped
2 Garlic cloves, crushed
1/2 tsp Paprika (Sweet or Hot)
1 tbsp fresh thyme (plus sprigs for garnish)
600mls Vegetable Stock
2 large Sweet Potatoes
600g Passata
400g can mixed beans or pulses (Drained and rinsed)
Salt and pepper to taste
**NOTES**
We don't like mixed beans much, so I replaced them with a can of baked beans and reduced the stock and passata to 500mls each.
Consider using red onions to give a much nicer colouring.
Put the chorizo in a large pan over a medium heat and cook for 2 minutes or until it has released it oils. Remove the chorizo and set it aside for now.
Add the onion, garlic , paprika and half the thyme to the pan and fry gently in the chorizo oil for about 5 mins until the onions soften. You may need to add in some more oil depending on how much it released but keep it to a minimum.
Pour in the stock and passata and then stir in the sweet potato and beans and pulses. Bring the pan back to the boil then reduce the heat to low and gently simmer for 15 mins or until the sweet potatoes are tender.
Return the chorizo to the pan and let it sit for a minute so the chorizo is brought up to temperature.
Scatter over the rest of the thyme and serve with a crusty roll.
