Master Sushi Chef Hiro Terada shows you how to fillet a Scottish Salmon, keeping in mind you will need two very important things: a sharp knife and a pair tweezers to remove the bones.

One thing that is not shown  here is the descaling of the fish, a process that requires a specific descaling tool.
