I promised my grandson that I would start keeping a sort of diary this year. As part of his adoption, I made him a life-book of the highlights (and lowlights) of his life, so I'm going to do something similar to leave a record of my life for him.
Lucas wants me to add photographs, recipes and some of my quips learned from my grandparents and great grandparents so he can have a way to remember me and the knowledge I carry of his forebears. I have heart failure and my health is not the best, so I'm going to do my best to keep my promise to him and write often.
One of my traditional recipes that I make for every holiday is Cloud Nine, so today I will post the recipe!
CLOUD NINE
Ingredients
1 8 ounce tub of cool whip
1 8 ounce package cream cheese
4 Tablespoons sugar
1 8 ounce can crushed pineapple, drained
1/4 cup pineapple juice
1/2 cup chopped maraschino cherries
1/2 cup chopped pecans
Instructions
Mix softened cream cheese with 1/4 cup of reserved pineapple juice from the can of crushed pineapple, a little at a time.
Add sugar, 1 Tablespoon at a time, to softened cream cheese and pineapple juice mixture until well mixed.
Fold in the 8 ounce tub of cool whip, beating gently, by hand or with a mixer.
Add in the pineapple, chopped maraschino cherries and chopped pecans and stir throughout the cream cheese/cool whip mixture.
Chill for at least 4 hours before serving.
*For more a more festive look, add a little maraschino cherry juice for added color
