Yesterday I decided that it was about time I actually making something I have wanted for years. Ice-cream!
Ok... I know it's not actually ice-cream, it's Fro-Yo, better known as frozen yoghurt. I really wanted to make a full fat, proper ice-cream, but I'm not a big enough fan of it and my wife is on a diet, so this is what I settled with!
In all it was a much better turn out than I thought it would be. Normally "fat free" and "sugar free" tends to mean "flavour free", so colour me shocked when this turned out to actually be edible!
500g fat free fromage frais
3 tbsp Sweetener
Dash of Vanilla essence
In a large bowl stir together the vanilla yogurt and fromage frais.
Add the sweetener and vanilla essence, then pop in a freezer-proof tub. Place in the freezer and lightly whip approximately every 30 minutes to stop ice crystals forming.
Your ice cream will be ready in 2-3 hours, when it is set. Remove from the freezer 10 minutes before serving to make it easier to scoop.
This photo was taken after the 30 mins in the freezer and the first whisk. As you can see it has more than a couple of lumps.
Looking back, this and the second whisking would have been better done with an electric whisk. I just couldn't get it as smooth as I would have liked.
The video above was how it looked after the second 30 mins in the freezer. The crystals were definitely forming now. I'm not sure if the electric whisk would have worked in this, it was very thick by this point.
This vid was much later. 2 hours in the freezer, or the 4th whisking.
Looking back on it now, other than the initial scrape around the edge the electric whisk would have coped fairly easily with this. It seemed actually much lighter on this time than in the other video. Very strange!
And this was the result!
This was after three and a half hours and 6 whiskings. By the 5th time out of the freezer I was using a wooden spoon to move it about!
It did taste nice though!
One point I need to make about this. This recipe is ideally made for eating immediately. If you leave it in the freezer it will set rock hard, be warned!
I actually put what was left in the fridge, rather than the freezer and it was still fairly stiff the next morning. I suppose you could whisk it again and put it back into your freezer for 30 mins if you wanted.

Also. This recipe is ripe for tweaking to suit your tastes.
I made the plain vanilla version because I didn't want to waste anything if it went bad.
I would, however, suggest not putting any fruit in too early. I would wait till just after the 2 hour mark, or 4 whiskings, that way you will just be using a wooden spoon and the fruit won't be broken up too much.
If we do this next time I will seriously think about a mint version, with a little green food colouring to boot! B-)
