I've been told by many friends to do a swineapple. A hollowed out pineapple, stuffed with a pork tenderloin wrapped in a bacon weave. It was fun constructing this dish and you will only need three things for it.
1 Pineapple
1lb Pork tenderloin
1 Package of bacon (thick cut or regular is all up to you)
Take your pineapple and cut the top of it off. What I did to remove the core was I took a knife, cut around the core and scooped it out with a spoon tell I got down to the bottom.
For the tenderloin, remove any silver skin you can find. really clean it up. You can use your knife and measure out, how much length to cut for the pork.
Use whatever bbq seasoning you like and cover the pork with it. Now stuff the loin into the pineapple and use toothpicks or wooden skewers to connect the top of the pineapple to the body.
Next is the bacon weave. If you don't know how to make one, there are many videos that teach you.
Having the bacon weave on parchment paper, makes it easy to roll it onto the swineapple.
To cook it, set up your grill for in-direct cooking. The grill temp will need to be at 300 degrees and make a drip pan to catch all the grease. You know how much of a pain in the ass it is to clean a grill, after smoking pork.
If you have some wood chunks add them in as well. Use a fruit or nut wood since you are cooking with pork. That type of wood and meat complement each other. Swineapples take 2 hrs to cook. So you will need and instant read thermometer and watch the grill's temp.
After a hour I basted the bacon. Trying to keep the bacon from drying out and breaking apart. that high of a temperature and that long will burn up the bacon. So use any sauce you think will taste good with a swineapple.
The pork tenderloin will be done when the internal temp is at 160 degrees. Once it's done, wait about five minutes then remove the top slice up the swineapple.
Side note: I'll say it again, they're fun to construct but, the end result is meh. Cooking the bacon was trickier to do this way. It cooks faster then the tenderloin and if you use foil to loosely cover it, you wont get any smoke on it. The grease from the pork had nowhere to escape so it just stayed inside making the meat texture soggy. Best way I can describe it. If you try this at home, you can use thick cut bacon so it doesn't cook so fast and just to give you the heads up. Swineapples are really a two person meal.
