I've been waiting years to get a Prime Rib AKA bone in ribeye roast. And this cut of beef is the ribeye connected to the bone.
For whatever reason the butcher I picked this roast up from, cut off the bones then tied them back on. For show, most pit masters will tie up the roast to keeps it's shape while it cooks. with or without the bone still attached. They will fall off when the roast is done so I guess it's pit master preference.
So for this BBQ I used olive oil for a binder. Then I used two dry rubs as shown. (I'm NOT sponsored by any of the makers for these rubs. But I will link the website where I did find the Justice for all rub.) My first layer was with the all purpose rub then, the sweet honey pecan for the second layer.
This is a five pound roast so it can take a good amount of seasoning. So there is no need to be liberal with the rubs.
For this smoke I wanted to try out a new method I learned ,to help keep the smoke rolling and the smoker temp steady. First I took a chimney of lit hot coals and placed a dry log of hickory on top. Then I let the smoker door open until the wood caught fire. After closing the smoker lid, fully opened the side vent letting in more air.
Having more air flow into the smoker and using dry wood instead of soaking it in water, gave me much better results. The smoke was much more clear almost to a light blue color to it. And each log lasted about 45 minutes before I had to add another one on. When it comes to smoking up any thing, you can't have heavy thick smoke and this method worked best for me.
I placed a couple of ceramic cups filled with water to keep moister in the smoker. I cooked this prime rib for two hours. Cooking at 250 to 275 degrees and reaching an internal temp of 130 degrees in the roast.
When the roast internal temperature is to your liking, take it out of the smoker and let it rest for 15 to 30 minutes. Slice it up however thick you want the slices. And if your good enough at thinly slicing meat, you can make a big prime rib sandwich.
