These are some meaty slabs of ribs from the cow and you can find these at your local butcher. Beef ribs are sold by the pound so it's best to go for at least 4lbs. This slab was about 4 lbs and let me show you how to cook these.
First thing to do it let the ribs set out for 30 minutes so it can get to room temperature. While it's setting, go ahead and give a nice coat of your favorite bbq rub. I used Kosmos Q's dirty bird. I really do love that rub. Letting the rub sit on the meat will cause it to sweat and draw it into the meat.
Now when you are going to smoke these ribs, do it low and slow. I set up my grill for indirect cooking. my grills temp was at 275 which is fine. low and slow temp is between 225 to 275. Just to make sure I can keep my grill easy to clean, I made a drip pan out of aluminum foil and put a couple of chunks of hickory wood on the hot coals.
Beef ribs will take about 4 hours to cook. So go ahead and let it cook and in a hour, go back to the grill and add a little more wood to keep the smoke rolling.
After 3 hours in I added 2 cups of beef broth to keep some moister and add a little more flavor to the ribs. You can use a can of broth or some bullion cubes. I used the cubes because it's cheaper but you can use either one. Just use some foil to hold the ribs and the broth in.
Now wrap up the ribs in the foil and set it back out on the grill for the last hour. The ribs are done when the internal temp is at 202. When they hit this temp go ahead and take them off the grill and let it set for 30 minutes. When it's time to serve them just cut them like any other rib dinner.
