For this new blog I went with a very simple BBQ chicken recipe, beer can chicken. You will only need three ingredients.
1 whole chicken
1 can of beer (It doesn't matter what kind of beer and you can sub the beer out for water)
Any kind of BBQ seasoning you would like to use.
First thing to do is wash the chicken with cold water and pat it down dry with a paper towel. Take your can of beer and make it half full. Once the chicken is dry, coat the bird with the seasoning all over. If there's any seasoning let, put it in the beer can. Open the top of the can like I have here so it's easier to poor in the seasoning.
Now that the bird is seasoned place it on top of the beer can through the cavity. (yes it is humorous to look at) While the chicken is cooking, the beer or water in the can will steam up in the cavity keeping the bird nice and moist. Go ahead and fold the wings back behind it so the wings don't burn while cooking.
Set the grill up for indirect cooking (opposite the hot coals). You can use an aluminum pan or make one like I did to catch all the grease. Your grill temp should be around 350 degrees and the cooking time will be 45 minutes to an hour. It depends on the size of your bird. Most whole chickens you find in a super market averages out to be around 5 - 6 pounds. When you set the chicken on the grill, set it up so the legs are slightly foreword like a tripod so it won't fall over.
Every 15 minutes rotate the bird a quarter of a turn so it will cooks evenly. Just make sure you keep the grill's lid closed so you don't lose the temp and would have to cook the chicken longer then necessary.
Cooked poultry is done when the internal temp is 165 degrees in the breast. If you don't have a cooking thermometer you take a fork and poke it, if the juices run clear it's done. Once the chicken is done cooking, let it set for 10 minutes then remove the beer can from the cavity and throw that gross can away. Cut up the chicken and serve.
