What I used this time (ps. it was really good)
2# round steak
2C Bacon and Green Beans (precooked and preserved)
2Pnts Stewed Tomatoes
Flour
Olive oil
How I did it:
Cut steak into 1" pieces and pound till 1/4" thick
Toss steak in flour
Heat olive oil in oven safe pot (I have a non enamel cast iron dutch oven that I love for this)
Brown steak in batches till golden on both sides (adding more oil as needed)
Remove and set aside
Turn off burner
Pour tomatoes in a bowl and crush with a potato masher, add green beans
Pour 1/2 of tomato mixture into dutch oven, add the steak, then remaining tomato mixture. Stir.
Bake at 350 for 1 hour.
I served with mashed potatoes.
