I honestly thought I've already post this recipe...perhaps I did a post and not a blog. I went to visit with my grandmother this morning and when I returned my husband was not at home. Shortly after he began texting me if we had seemingly random things like provolone cheese, rice (silly question I grew up Hawaii and am an avid prepper anything less than 20# isn't enough on hand) and bacon. To the average person this doesn't seem like much but I instantly responded with "am I making stuffed pork chops tonight?"
6 think cut pork chops
3 slices provolone
18-24 leaves baby spinach
2T olive oil
6 slices bacon
12 pearl potatoes quarters
4-6 cloves peeled garlic
Preheat oven to 350°f
Slice pork chops to create pocket, fill pocket with half a slice of provolone cheese and 3-4 leaves of spinach. Heat olive oil in oven safe pan, fry pork on each side for 5 -8 minutes. Wrap each chop with one slice bacon. Add potatoes and garlic to pan. Season with salt and pepper. Bake for 35-40 minutes or until internal temp reaches 145°f.
We serve with rice and salad.
