Making Eggnog w/recipe

Another easy recipe, and it doesn't take very long...here is what you will need

1 pot, 2 mixing bowls, thermometer, hand mixer, whisk, wooden spoon or spatula

1/2 Gallon Milk

1 Pint Heavy Cream

8 Eggs

1/2 C sugar

1 t Cinnamon

1/2 t Nutmeg

1/4 t Ginger

First we put the milk and cream into the pot, on med-low heat. 



We are going to scald the milk/cream (meaning just bring it to the boiling point). If you are familiar with scalding you won't need the thermometer, if not, then bring the milk/cream up to about 180* F...Stirring frequently


While the milk is warming, we separate the eggs...

Add 1/4 C sugar to the yolks, and whisk till creamy...then add all the spices, mix well again, and set aside

Keep pausing to stir the milk


Next we beat the egg whites, slowly adding the other 1/4 C sugar...beat until you get medium peaks (a nice smooth meringue)


When the milk/cream is up to scalding, turn the heat off and whisk in the egg yolk mix...it is important to add the yolk right away as the heat will kill any bacteria...


Once mixed, we then whisk in the meringue...then put in a pitcher or jars



This is The Best eggnog ever :) If you add alcohol it will be perfect as is...If you are no alcohol people like us, we just add a bit more milk to thin it down a bit.
