This is the way I make Almond Milk, and most nut milks.
To make 1 Quart of milk we will need...
1 Cup Raw Almonds
1 Medjool Date
A pinch of Cinnamon
(I add 1 tsp Vanilla)
4 C Water
First we put 1 C dried raw almonds into a bowl, cover with water, and let them soak overnight to re-hydrate.
In the morning, rinse and remove almond skins. They slide right off if you pinch them. They can be left on if you prefer a more bitter flavor, but I like to remove them.
You can see these are good almonds, they got sprouting buds overnight. Very much alive. I could continue sprouting and plant them.
Anyways, give them a rinse, put them in a blender with 4 C water, the date and cinnamon, and vanilla. Blend them like a smoothie...until you have a nice white frothy, creamy blend.
Next I take a lg bowl, drape a loose weave flour sack towel over it, pour the liquid in...
Then strain it, and squeeze the pulp to get as much milk out as you can...
Fill your bottle, and it is ready to drink :)
You can compost the pulp, or dry and save it for baking like I do...
I just spread it on a cookie sheet and put it in the oven with the pilot light on, but you can use a dehydrator too, with the fruit leather trays.
Once it is dried, it can be jarred or stored in mylar bags. Then it can be added to baked goods as is, or run through a mill to make almond flour.
The milk will last up to 4 days in the fridge, but it will be gone before it goes bad :)
